CHIROSO! Chiroso is a variety whose name we've heard frequently in competitions in recent years. Let's examine it together. Until recently, it was believed that Chiroso was a natural mutation of Caturra found in Colombia. We also used the name Caturra Chiroso in the first example we presented in our selection a few years ago, based on this belief. However, recent studies support the idea that Chiroso is not a Caturra mutation, but rather genetically linked to Ethiopian native species (landrace – heirloom). Therefore, we now simply call the variety Chiroso. Chiroso is a very rare variety both in terms of bean shape and cup profile. Its slender, elongated shape and complex cup profile, along with its high floral and sweetness, distinguish Chiroso from other varieties. According to its producer, Chiroso can be described as a native Colombian Gesha variety. Over the last three or four years, Chiroso has become a very rare variety for us, although we've had the chance to try seven or eight Show More
