Since the surface area is slightly larger than single-sided crepe paper, the area for dust particles to adhere is also larger. In the first half of brewing, dust particles adhere less, so the flow is quite consistent, while in the second half, dust particle adherence increases, slowing down the flow rate. Thus, the faster flow in the first half and the slower flow in the second half allow for increased body and sweetness in the cup.
